Menu Plan Monday – 11.15.10

Thanksgiving 

This is our last "normal week" until probably mid-January.  Starting the day before Thanksgiving, we've got several rounds of guests coming, holiday craziness and some life craziness all going on, and I think I'm going to try to get back into the two week menu planning groove. 

As always, this is a gluten-free menu plan…

Monday
Chicken Pot Pie
A mash-up of my old favorite chicken pot pie with the sauce from this recipe and a crust using the Bisquick gluten-free mix.  I'll try to get the recipe posted this week – it was a big hit with my gluten-friendly eaters, too.

Tuesday
Yellow rice and beans
Quesadillas
Still working on a tutorial for homemade corn tortillas – maybe in the next week?

Wednesday
Hot Dogs (no bun for me)
Leftover beans and rice

Thursday
Chicken Nuggets
Mashed potatoes and gravy
Broccoli
I'm testing out my old chicken nugget recipe with gluten-free panko – if it works, I'll try to get it posted soon!

Friday
Pork Chops
Rice Pilaf
Squash

Saturday
Gluten-free pancakes
Sausage
Applesauce

Sunday
Kid's choice

Monday
Cook out with friends

Tuesday
Cream of Tomato Soup
Grilled Cheese (on Udi's for me)

Wednesday
Guests arrive and it's the day before Thanksgiving – I think we'll eat out!

Thanksgiving!!!

Chipotle Chicken Chili
Cornbread
Still looking for a gluten-free cornbread recipe I love.

Saturday
Mongolian Beef
Brown Rice
Gluten-free wontons if I'm feeling crazy
