It’s back to school week for us, even though school doesn’t start until Thursday. Add to that 3 nephews, a few appointments and all the other randoms and we’ve got a crazy week.
Which makes me extra glad I took the time to start playing with Plan to Eat last week. I’ve played around with different meal planning sites for a few years now and none have impressed me the way Plan to Eat has. I was able to get the majority of our regular recipes uploaded in a few hours and putting together this week’s meal plan took about 5 minutes. Maybe less and it automatically generated my shopping list!
I’m also hoping to sneak in a little baking to get the freezer ready for school – definitely some breakfast muffins, blueberry muffins and probably some chocolate chip cookies. If I get really crazy, I might do a few waffles to freeze.
So this crazy week’s meal plan?
Crock Pot Chicken (using on the bone breasts instead of the whole chickens)
Sauteed Squash (blessed with some homegrown and it is sooo good!)
Tuscan Lemon Chicken
Macaroni and Cauliflower Cheese Bake (I’ll share the recipe soon if we like it)
Grilled Chicken Burgers
Veggie Stir Fry
Cuban Rice and Beans (another new recipe)
Leftovers or maybe breakfast for supper

A quick note: I am gluten-free, so any meals with pasta are made with brown rice pasta and I just skip any breads. Baking for my family is usually done with regular flour and anything for me is usually made with Jule’s Gluten-free Flour.
