menu plan monday – 10.24.11

A few hold-overs from last week – which was just plain nuts. Our weather is going to be a little cooler, though, so that chili will be even more enjoyable.

Also, I might be making a few more tweaks on recipes – I’m starting a Whole 30 today and I’ll have to evaluate each recipe as I go. More on that tomorrow. 

Easy Steak Skewers (with extra veggies)
Curried Cauliflower
Tossed Salad

Chipotle Chicken Chili (a few changes: made with grassfed beef instead of chicken, more veggies and skipping the beans)
Savory Almond Muffins (so excited to try these!)

Roast, veggies and some sort of squash in the crockpot
Tossed salad

Grilled Chicken with Rosemary and Bacon
Roasted Rosemary Sweet Potatoes
Steamed Broccoli

Hubby and kids are headed to Grandma’s for the night, so it will probably be left-overs for me

Leek and Sweet Potato Soup

  2. Thanks for joining us again this week. I still need to try the chipotle chili, but now the skewers and grilled chicken with rosemary look good, too. Who says gluten-free (and paleo!) isn’t good food! Certainly not me.

  3. Wow! So nice to see a paleo/whole foods menu! Good luck with Whole30. I’ve never done it before, but something similar.

    We’ve since added beans and white rice back in and feel good. I eat potatoes as well, but not in the morning…I think each person is different and has to find what works for them. My husband will occasionally eat bread without any problems, but not me!
