menu plan monday: 10.31.11

Happy Halloween! I’m so excited to take my kids trick or treating tonight in the neighborhoods I grew up going to – a first for us – and Tom will be passing out candy out front of the church. We’re looking forward to a fun night. Still deciding what to do about the candy – I think my young Scrooge McDucks might actually be willing to sell it to me and then I’ll donate it somewhere.

We’ll see.

For this week’s Gluten-Free Menu swap theme of soups and chilis, I’m sharing my cream of tomato soup (it’s yummy and I shared a few adaptations I’m working on down below). I’ll also be sharing my new version of my Chipotle Chili tomorrow – we like it better than the orginal!

Monday
Spaghetti with Roasted Tomato Sauce – I’m basing the sauce on this recipe (minus the jalapeno)
Zucchini Noodles
Tossed Salad

Tuesday
Steak Tips with Roasted Veggies – a marinade I’ve been working on. I’ll share it once I get it just right.

Wednesday
Garlic Beef Stew – using this recipe as a guideline

Thursday
Southwestern Flanksteak – served on butter lettuce for the adults and corn tortillas for the kids
Avocado
Roasted Cauliflower

Friday
Cream of Tomato Soup – replacing the milk with coconut milk and skipping the cream cheese and possibly using fresh tomatoes (we were given two large bags recently)
Grilled Chicken Skewers (probably in a basic garlic, rosemary and olive oil marinade)

Saturday
Something easy since we’ll be at a holiday bazaar most of the day – I’m thinking a frittata of some sort – I like the looks of this one

I have no idea. At all.

It’s going to be a fun week – one of our MFF’s (most missed friends) is coming to visit from Florida next weekend – and we can’t wait. The weekend menu is a little bit open, but here’s the rest:

The last full week before school starts on the 18th, and it’s going to be a busy one. Dinners out, doctor’s appointments, nephews for a day, a train trip to Old Town Sacramento and an 80th birthday party for one of our church members – I’m going to have to be on or this menu will fall apart!

We had a much needed, much enjoyed lazy Sunday at our house after two days in a row of trips to the "big city" an hour away…including 3 hours at the emergency room for a mis-diagnosed case of strep throat. We have a few roll-overs from last week due to that and a few other things I need to get on the menu before they get spoiled.

It hasn't been easy to plan this week!

*My order of Jule's Gluten Free flour should arrive this week, and I'm saying a prayer I can put together some sort of bread for these sandwiches by Sunday. If not, I'll just eat the veggies with a little cheese and maybe a bite or two of sausage. I really hope I can – I've missed those sandwiches!

Menu Plan Monday – sort of!

Christmas

 I'm coming to my menu planning this week with more of a goal than an actual plan – I'm starting the week with one sick child, a desire to get the house in order for Grandma Fee's arrival on Wednesday and a need to get a bit more serious about moving…or at least a need for a plan for that move.  I'm trying to keep an inventory of what's in the cupboards and freezer so I can start really using things up. 

And as usual, it's all gluten-free!

Thanksgiving 

It's going to be an easy week in the kitchen around here.  It seems like we've got an errand of some sort every day after school, so I'm trying to focus on meals I can throw together quickly or prep earlier!  Everything, of course, will be gluten-free.

for the tacos: throw taco seasoning (here's a recipe), a jar of salsa and a few chicken breasts in the slow-cooker and let cook on about 6 hours)

Menu Plan Monday – 10.24.10

Thanksgiving 

One new recipe to try this week and several of our old favorites.  My body is telling me I want soups and stews, but the weather is telling me it's going to be upper 80's. 

Ick.

It's been busy, busy around here but I think we're finally heading into a bit of a lull, and I'm thankful for that.  And this business has had me turning to more packaged/processed gluten-free foods, which I know aren't my best choices.   Somehow, the fruits and vegetables I normally love have fallen out of my diet.  Time to get them back in!

the lasagna has been on the menu for weeks and keeps getting bumped.  It's an easy/cheaper lasagna recipe that I got from my grandmother that we all love and I'll share it if I can ever get it made to take a photo!  I'll be making it with rice pasta.

Hanna and I had the soup last week, and it was delicious!  It looks like we're going to have a warm week (boo!) followed by a cooler weekend – time for soup.  I'll be using Udi's bread for my grilled cheese.
