We had a much needed, much enjoyed lazy Sunday at our house after two days in a row of trips to the "big city" an hour away…including 3 hours at the emergency room for a mis-diagnosed case of strep throat. We have a few roll-overs from last week due to that and a few other things I need to get on the menu before they get spoiled.

It hasn't been easy to plan this week!

Carrot Salad (an old, family recipe my husband just discovered and loves. I'll try to get the recipe shared this week)

*My order of Jule's Gluten Free flour should arrive this week, and I'm saying a prayer I can put together some sort of bread for these sandwiches by Sunday. If not, I'll just eat the veggies with a little cheese and maybe a bite or two of sausage. I really hope I can – I've missed those sandwiches!

menu plan Monday – 07.11.11

It's been sooo long since I've been able to get one of these published. It's my first official week of meal planning in the parsonage and, boy, do we ever need it. I've been picking up groceries, but somehow never seem to get the right things to actually make a meal. It makes such a huge difference in the way my day is ordered – not to mention our budget! – to have a menu plan in place.

A quick note: while most of my family isn't, I am gluten-free and eat meat only occasionally. Any recipes that call for pasta, I just substitute brown rice or quinoa pasta. I skip bread, and eat extra veggies and the grains I can eat instead of meat.

Asian Slaw (a bag of slaw mix and my favorite Pampered Chef Asian Dressing)

Tuesday
Pork Chops (marinated in garlic and rosemary from the bush I found outside Tom's office)

Fajitas (add mushrooms – sooo good!)

Menu Plan Monday – sort of!

Christmas

 I'm coming to my menu planning this week with more of a goal than an actual plan – I'm starting the week with one sick child, a desire to get the house in order for Grandma Fee's arrival on Wednesday and a need to get a bit more serious about moving…or at least a need for a plan for that move.  I'm trying to keep an inventory of what's in the cupboards and freezer so I can start really using things up. 

And as usual, it's all gluten-free!

It's fair to say this week is  a little heavy on Thanksgiving leftovers, but when you have a turkey and a ham for five people…I suppose that just happens!  After nearly a week of expensive feasting and eating out, I'm pretty thankful for those leftovers!

And a quick note – I'm going to be working on a little blog re-design, so if things get to looking wonky I ask for a bit of patience.

Menu Plan Monday – to Thanksgiving and Beyond!

Thanksgiving 

I cannot wait for Thanksgiving!  If I were to rank my favorite holidays, it's easily number one.  I generally start planning my menu months in advance…which is a bit silly considering it doesn't really change all that much.  Even needing a gluten-free diet this year, I'm just making a few adjustments and crossing my fingers.  I can't wait to see how Udi's bread works for stuffing!

I'm posting a two week plan again – it helps with planned leftovers and grocery shopping so much!

This is our last "normal week" until probably mid-January.  Starting the day before Thanksgiving, we've got several rounds of guests coming, holiday craziness and some life craziness all going on, and I think I'm going to try to get back into the two week menu planning groove.

Thanksgiving 

It's going to be an easy week in the kitchen around here.  It seems like we've got an errand of some sort every day after school, so I'm trying to focus on meals I can throw together quickly or prep earlier!  Everything, of course, will be gluten-free.

for the tacos: throw taco seasoning (here's a recipe), a jar of salsa and a few chicken breasts in the slow-cooker and let cook on about 6 hours)

Menu Plan Monday – Hello, November!

Thanksgiving 

Can I share a confession?

I am sooo thankful September and October are over. 

They were two of the most stressful, chaotic months I can remember.  I know I have no guarantees that November will be better, but it feels a little more settled…a little more hopeful…a little more organized.  Plus, there's always Thanksgiving at the end of the month, and I've still got a few recipes I need to pull together in the next week or two. 

Here's the meal plan for this week:

Still working on the recipe I tried last week – it was good, but not great and seriously lacking in spice.  If I'm happy with tonight's version, I'll share it tomorrow.

Mashed Potatoes and Gravy (made with tapioca starch or cornstarch instead of flour)
Squash and Onions

Garam Masala Candied Carrots
Baked Macaroni and Cheese
The carrots are a recipe I'm working on for Thanksgiving.  I'm hoping they'll be ready to share later this week or next.  And the mac and cheese is something that came to me the other night…at about 2 am.  It's a combination of a few other recipes, with brown rice pasta.  If it isn't a colossal failure, I'll try to get it shared soon.

Last week, I did a two week menu plan…and while we got through most of last week's, I got really inspired by an episode of Mad Hungry on Hallmark channel last week and replanned most of this week.
