Menu Plan Monday: 05.21.12

It’s been a few weeks since I’ve gotten a menu plan together and, as always, we’ve paid for it. In the past 3 weeks, we’ve had three houseguests and enjoyed a short vacation, and have had just a whole lot of running around going on. With only three more weeks until summer break and the start of our No Excuses Summer, I’m working hard to get my own daily schedule in place and some bad habits taken care of before the kids are home all day.

A menu plan is always one of the best places to start.

I’m also working on keeping meals a little simpler – we were able to pick up a new barbecue, which will help immensely, and I’m starting to see farm stands pop up with awesome (and cheap!) vegetables. As I always do at the beginning of summer, I’m craving simple and fresh meals.

Monday
Fajitas (just dumped on a big salad for me, with corn tortillas for the kids)
Guacamole
Tossed Green Salad

Tuesday
Grilled Chicken, seasoned with Magic Mushroom powder from the Nom Nom Paleo app (which is brilliant, by the way)
Grilled Squash – I have a bit of a glut already and summer isn’t even here yet!
Grilled Sweet Potatoes

Wednesday
All beef, no weird stuff hot dogs
Carrot sticks

Thursday
Skirt Steak with Chive Butter (from Make It Paleo)
Steamed Broccoli
Green Salad

Friday
Red Curry Glazed Chicken Skewers
Roasted Cauliflower (drizzling with coconut oil and my favorite vadouvan spice mix )
White Rice (for the kiddos)

Saturday
Easy Chicken Cacciatore
Quinoa pasta for the kids
Spaghetti Squash for me

Sunday
Mom’s Night Off – leftovers or whatever you’re capable of making on you’re own

It’s going to be a fun week – one of our MFF’s (most missed friends) is coming to visit from Florida next weekend – and we can’t wait. The weekend menu is a little bit open, but here’s the rest:

Chicken with Creamy Sun-Dried Tomato Sauce
Brown Rice – looking for a soaked, baked recipe
Sauteed Squash

Tuesday
Easy Slow Cooker Pot Roast
Potatoes, Onions and Carrots

Wednesday
Mushroom Pork Chops (I use this recipe for homemade cream of chicken soup, using half the amount of corn or tapioca starch instead of flour for thickening)
Steamed Broccoli

Thursday
Soutwestern Flank Steak
Green Salad

Friday
Slow Cooker Chicken Tortilla Soup

Saturday
Grilled Lamb Chops
Grilled Tri Tip Steaks with Montreal seasoning
not sure what else yet – definitely a great big salad…maybe some grilled veggies and potatoes?

Sunday
quick trip to San Francisco after church – looking for somewhere good to eat, possibly on the water

Menu Plan Monday – 11.15.10

Thanksgiving 

This is our last "normal week" until probably mid-January.  Starting the day before Thanksgiving, we've got several rounds of guests coming, holiday craziness and some life craziness all going on, and I think I'm going to try to get back into the two week menu planning groove. 

As always, this is a gluten-free menu plan…

Chicken Pot Pie
A mash-up of my old favorite chicken pot pie with the sauce from this recipe and a crust using the Bisquick gluten-free mix.  I'll try to get the recipe posted this week – it was a big hit with my gluten-friendly eaters, too.

Quesadillas
Still working on a tutorial for homemade corn tortillas – maybe in the next week?

Menu Plan Monday: February 8, 2010

Oh, it's going to be a crazy week around here…followed by an even crazier weekend.  I'm thankful again that I have so many dinner components waiting in the freezer.

Monday - Sticky Chinese Chicken Wings and vegetable fried rice 
A new recipe I'm making a few adjustments to – I will share if we like it!

Tuesday - Tacos, Carrots 
Tom is back in seminary, and it's just the kids and I for supper.  Tuesday nights are going to be easy nights for the next few months.  

Wednesday - Dad's choice
    I've got tickets to see Phantom of the Opera and will be eating out with friends.  Wednesday night church for Tom and the kids.

Thursday - Citrus Port Chops, Ranch Roasted Potatoes, Broccoli

Sunday - more craziness!  Hanna and I will be at her Confirmation retreat, and Tom and Caleb have church, possibly skate park and another concert that night.
